LOADED SWEET POTATOES

I just combined the three best foods in the world: Sweet Potatoes, Avocados, and Bacon.  This.  Meal.  Was.  Rad.  Seriously, anything with sweet potatoes is great.  Plus the guac, and then topped with bacon?!?!  Ya’ll are gonna die when you taste it.

It’s a pretty grey and gloomy day, so what better way to spend it than experimenting in the kitchen?  This is probably my new favorite hobby.  I tried one recipe before I made the sweet potatoes, and I can’t wait to perfect it and share it with all of you.  But first: Loaded Sweet Potatoes.

What you need:

2 large sweet potatoes

1 pack bacon (Whole30 approved, just check the ingredients)

3 avocadoes

1 lime

1 red onion

1 handful cherry tomatoes

cumin

chili powder

salt & pepper

The process:

First, you will need to peel and chop your sweet potatoes.  Get a large bowl, fill it with ice water, and place the pieces in the water.  Set the bowl aside.

Next you will make the guacamole.  Super simple: dice your avocados, tomatoes, and onion, then place in a large/medium bowl.  Next, squeeze the lime over.  Add 1/2 tablespoon of both chili powder and cumin, and start mixing and mashing.  I left some chunks of avocado, but you can mash yours completely if you like.  Add salt and pepper to taste.

In a medium frying pan, you will cook your bacon.  My family likes our bacon crispy, so just cook it however you so please.

When everything else is finished, you can strain your sweet potatoes.  In a large frying pan, add one tablespoon of (you guessed it) coconut oil on high heat.  Pour in your sweet potatoes.  I quickly added some chili powder, cumin, and salt for flavor.  Fry them until they can be pierced with a fork, and make sure they get a little brown on the edges.  (Or black, in my case.  But hey, they still tasted amazing!)

Place the sweet potatoes on your plate, add a laaaarge dollop of guac, and top with bacon bits!

That’s it!

I hope ya’ll like this recipe, it was super fun to make and even more fun to EAT!  My family is off on yet another trip this weekend!  I’m actually looking forward to June to finally settle down and get a routine going again.  Oh, and your girl is now employed!!  I’m super excited about my job and ya’ll will hear more about it later!  But for now, it is time to pack for the weekend (and get ready for my mom’s and my birthdays on Saturday 😉 ).
