I never eat breakfast. I don’t really “take my time” in the morning (a.k.a. I sleep until the last possible minute then rush around til I have to leave) and sitting down to eat breakfast is at the bottom of my priority list in the mornings. (Coffee is obvi at the top.)
BUT, I regret it about two-three hours later when I’m sitting in class or at work and my tummy starts rumbling. So I decided to get the best of both worlds. These egg white bites only take about 30 minutes to make, and then you have a super quick breakfast for the rest of the week!!
What you need:
eggs (or you can be intelligent and buy egg whites in a carton 🙂 (do this))
mini muffin trays
Preheat oven to 350. Spray muffin trays with cooking spray. Dice tomatoes. Chop up spinach. In each muffin hole, put about 3 tomato cubes and 2 pieces of spinach. (Doesn’t have to be that exact….just don’t fill them up too much.) Salt & pepper over the veggies. Start cracking your eggs and putting the egg whites in!!! (This took way too much time and was very difficult. A full egg white overfills the tray and makes a complete mess. If you love yourself you will buy egg whites at the store.) Once the trays are full, bake for 20 min!
They were so yummy, I had four in one sitting!! My dad had 8!!!!! I think four makes the perfect breakfast and will give you just the right amount of energy you need in the mornings.
